INGREDIENTS

  • 4 cups cubed seedless watermelon
  • 2 cups cubed peeled mangoes
  • ½ cup diced peeled jicama
  • 3 tablespoons chopped sweet onion
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon white balsamic vinegar
  • 1 teaspoon grated lime peel
  • ⅛ teaspoon salt
  • Dash of cayenne pepper

 

INSTRUCTIONS

  1. In a large bowl, combine the cubed watermelon, mangoes, diced jicama, chopped sweet onion, and minced cilantro.
  2. In a small bowl, whisk together the lime juice, honey, white balsamic vinegar, grated lime peel, salt, and a dash of cayenne pepper until well combined.
  3. Pour the dressing over the fruit mixture in the large bowl.
  4. Gently toss the salad to ensure that all the ingredients are evenly coated with the dressing.
  5. Cover the bowl and place it in the refrigerator to chill for approximately 20 minutes, allowing the flavors to meld together. Stir the salad occasionally during this time.
  6. Using a slotted spoon, transfer the chilled Southwestern Watermelon Salad to serving plates or bowls.
