Southwest Frito Pie is a comforting and flavorful dish that originated in the southwestern United States. It combines the deliciousness of seasoned ground beef, beans (optional), and a variety of toppings, all served on a bed of crispy corn chips. This hearty and satisfying meal has gained popularity for its bold flavors and easy preparation.

The history of Southwest Frito Pie can be traced back to the mid-20th century. It is believed to have originated in Texas, where Frito-Lay corn chips, made from ground corn and deep-fried until crispy, were a popular snack. The idea of using these corn chips as a base for a savory dish was a stroke of culinary brilliance.

The dish quickly gained popularity, especially at sporting events and fairs, where it was served as a convenient and delicious handheld meal. Its humble origins and affordability made it a favorite among people of all backgrounds.

Over time, variations of the Southwest Frito Pie emerged, with different regions and individuals adding their own twists to the recipe. INGREDIENTS

  • 2 pounds lean ground beef (90% lean)
  • 3 tablespoons chili powder
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 cups water
  • 1 can (15 ounces) pinto beans, rinsed and drained (optional)
  • 4½ cups corn chips
  • 2 cups shredded lettuce
  • 1½ cups (6 ounces) shredded cheddar cheese
  • ¾ cup chopped tomatoes
  • 6 tablespoons finely chopped onion
  • Sour cream and minced fresh cilantro (optional)

 

INSTRUCTIONS

  1. In a dutch oven, cook the ground beef over medium heat until no longer pink; drain. Stir in the chili powder, flour, salt, and garlic powder until blended; gradually stir in water.
  2. Add beans, if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until thickened, stirring occasionally.
  3. To serve, divide corn chips among six serving bowls.
  4. Top the corn chips with the cooked beef mixture.
  5. Sprinkle shredded lettuce, shredded cheddar cheese, chopped tomatoes, and finely chopped onion over the beef mixture.
  6. Garnish with sour cream and minced fresh cilantro, if desired.
  7. Enjoy your delicious Southwest Frito Pie, a flavorful combination of seasoned ground beef, beans (optional), and a variety of toppings served on a bed of crispy corn chips!

  • Nacho Style: To give your Southwest Frito Pie a fun and interactive twist, serve it nacho-style. Instead of assembling individual bowls, spread a layer of corn chips on a large serving platter. Top the chips with the cooked beef mixture, shredded lettuce, shredded cheddar cheese, chopped tomatoes, and finely chopped onion. Drizzle some sour cream over the top and sprinkle with minced fresh cilantro. This presentation allows everyone to dig in and create their own loaded nachos.
  • Baked Casserole: Transform your Southwest Frito Pie into a comforting baked casserole. Preheat your oven to 375°F (190°C). In a greased baking dish, layer half of the corn chips followed by half of the cooked beef mixture, shredded lettuce, shredded cheddar cheese, chopped tomatoes, and finely chopped onion. Repeat the layers with the remaining ingredients. Bake the casserole for about 20-25 minutes or until the cheese is melted and bubbly. Serve it warm, and you’ll have a delicious and satisfying meal the whole family will enjoy.
