INGREDIENTS 

FOR THE CRUST:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2-3 tablespoons ice water

 

FOR THE FILLING:

  • 2 cups cooked and mashed sweet potatoes
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup evaporated milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

 

INSTRUCTIONS

FOR THE CRUST:

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
  4. Gather the dough into a ball, flatten it into a disk shape, and wrap it in plastic wrap. Refrigerate for at least 30 minutes.

 

FOR THE FILLING:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, melted butter, beaten eggs, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix until well combined and smooth.

 

ASSEMBLY AND BAKING:

  1. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish and trim the edges.
  2. Pour the sweet potato filling into the pie crust, spreading it out evenly.
  3. Place the pie dish on a baking sheet and bake in the preheated oven for 55-60 minutes, or until the filling is set and the crust is golden brown.
  4. Remove the pie from the oven and let it cool completely on a wire rack before serving.

 

SERVING:

  • Sweet Potato Pie can be served warm or at room temperature. It is often enjoyed plain, but you can also serve it with a dollop of whipped cream or a sprinkle of powdered sugar for added sweetness.
