INGREDIENTS

  • 3 tablespoonfuls melted Crisco (shortening)
  • 2 cupfuls cornmeal
  • 1 quart milk
  • 1 teaspoonful salt
  • 3 eggs

  1. Heating Milk and Preparing Cornmeal Mixture:
    • Heat 1 quart of milk to boiling point in a saucepan.
    • Stir in 2 cupfuls of cornmeal and 1 teaspoonful of salt. Continue stirring to combine.
  2. Adding Crisco and Cooking:
    • Add 3 tablespoonfuls of melted Crisco to the cornmeal mixture. Cook the mixture for about five minutes, stirring continuously. This step helps to cook the cornmeal and incorporate the ingredients.
  3. Cooling and Adding Egg Yolks:
    • Allow the cooked mixture to cool slightly.
    • Add the yolks of 3 eggs that have been well beaten. Mix until the yolks are fully incorporated.
  4. Beating Egg Whites:
    • In a separate bowl, beat the egg whites until they reach a stiff froth. This step adds lightness and fluffiness to the dish.
  5. Folding in Egg Whites:
    • Gently fold the beaten egg whites into the cornmeal mixture. This delicate step helps maintain the airy texture of the dish.
  6. Prepping the Pan and Baking:
    • Grease a two-quart pan with Crisco to prevent sticking.
    • Pour the prepared batter into the greased pan.
  7. Baking Process:
    • Bake the mixture in a moderate oven for approximately forty minutes. The Southern Spoon Bread should rise, turn golden brown, and have a lightly crisp top.
  8. Serving and Enjoying:
