Barbecued brisket has deep roots in the culinary traditions of the Southern United States, where barbecue is not just a method of cooking but a way of life. The tradition of slow-cooking meat over indirect heat dates back centuries, with each Southern state having its own barbecue style. Brisket, a tough and flavorful cut of beef, became a centerpiece in Southern barbecue. The slow-cooking process, often done in a pit or smoker, allows the brisket to become tender, juicy, and infused with the smoky flavors of the wood.

INGREDIENTS

  • 1 whole beef brisket (approximately 8-10 pounds)
  • 1/4 cup paprika
  • 2 tablespoons brown sugar
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 2 cups barbecue sauce (your choice of style, such as tomato-based or vinegar-based)

 

INSTRUCTIONS

  1. Preheat your smoker or grill to 225°F (107°C), ensuring indirect heat.
  2. In a small bowl, combine the paprika, brown sugar, salt, black pepper, garlic powder, onion powder, chili powder, and cayenne pepper. This spice rub will add flavor and enhance the bark of the brisket.
  3. Trim any excess fat from the brisket, leaving a thin layer to keep the meat moist during the long cooking process.
  4. Generously coat the entire surface of the brisket with the spice rub, ensuring an even distribution.
  5. Place the brisket on the smoker or grill, fat side up, and close the lid. Maintain a consistent temperature of 225°F (107°C) throughout the cooking process.
  6. Slow-cook the brisket for approximately 1 1/2 to 2 hours per pound, or until the internal temperature reaches 195-203°F (90-95°C). This slow cooking will allow the collagen in the brisket to break down, resulting in tender and juicy meat.
  7. After the brisket reaches the desired temperature, remove it from the smoker or grill and let it rest for about 30 minutes. This resting period allows the juices to redistribute throughout the meat.
  8. Slice the Southern Barbecued Brisket against the grain, creating slices that are approximately 1/4 to 1/2 inch thick.
  9. Serve the brisket with your choice of barbecue sauce, either on the side or brushed onto the meat for extra flavor.
