This potato dish is perfect with prime rib and many other entrees. Make it ahead and have it ready to pop into the oven for a party. The topping of cornflake crumbs and Parmesan cheese adds a nice crunch.

INGREDIENTS

  • 1 can (10¾ ounces) condensed cream of mushroom soup, undiluted
  • 1 cup (8 ounces) sour cream
  • ½ cup 2% milk
  • 1 cup (4 ounces) shredded cheddar cheese
  • ½ cup butter, melted, divided
  • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
  • 1 cup cornflake crumbs
  • ¼ cup grated Parmesan cheese

 

INSTRUCTIONS

  1. In a large bowl, combine the condensed cream of mushroom soup, sour cream, milk, shredded cheddar cheese, and ¼ cup melted butter.
  2. Stir in the thawed shredded hash brown potatoes until well-coated with the sauce mixture.
  3. Transfer the potato mixture to a greased 13×9-inch baking dish.
  4. In a small bowl, combine the cornflake crumbs, grated Parmesan cheese, and the remaining melted butter.
  5. Sprinkle the cornflake crumb mixture evenly over the top of the casserole.
  6. Bake the casserole, uncovered, at 325°F (165°C) for 45-50 minutes or until the casserole is heated through and the top is golden brown and crispy.
  7. Once cooked, remove from the oven and let it cool slightly before serving.
