INGREDIENTS

FOR THE SHORTBREAD CRUST:

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, cold and cut into small cubes

 

FOR THE LEMON FILLING:

  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest
  • 1/2 cup heavy cream
  • Optional: Additional lemon zest for garnish

 

INSTRUCTIONS

FOR THE SHORTBREAD CRUST:

  1. Preheat the oven to 350°F (175°C). Grease a tart pan with a removable bottom.
  2. In a mixing bowl, combine the all-purpose flour and powdered sugar.
  3. Add the cold, cubed butter to the flour mixture.
  4. Use your fingertips or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Press the shortbread mixture evenly into the prepared tart pan, covering the bottom and sides.
  6. Prick the bottom of the crust with a fork to prevent it from puffing up during baking.
  7. Bake the shortbread crust in the preheated oven for approximately 15-20 minutes, or until lightly golden. Remove from the oven and let it cool completely.

 

FOR THE LEMON FILLING:

  1. In a large mixing bowl, whisk together the eggs and granulated sugar until well combined.
  2. Add the freshly squeezed lemon juice, lemon zest, and heavy cream to the egg-sugar mixture. Whisk until smooth.
  3. Pour the lemon filling into the cooled shortbread crust, spreading it out evenly.
  4. Place the tart pan back in the oven and bake for approximately 20-25 minutes, or until the filling is set and no longer jiggles in the center.
  5. Remove the tart from the oven and let it cool completely on a wire rack.
  6. Once cooled, refrigerate the tart for at least 2 hours or overnight to allow the flavors to meld and the filling to set.
  7. Before serving, garnish the tart with additional lemon zest, if desired.
