INGREDIENTS
- 1 cup Ensure® Vanilla powder
- 2½ cups mashED potato
- 2½ tins (425g) salmon
- Finely grated rind 1 lemon
- 5 spring onions, finely chopped
- 3 eggs, lightly beaten
- 2 tbsp vegetable oil
- 1¼ cups breadcrumbs
INSTRUCTIONS
- Place salmon into a mixing bowl with potato, eggs, lemon rind, spring onions and Ensure® powder.
- Shape well into 20 patties.
- Coat patties in breadcrumbs.
- Heat oil on medium heat and fry patties until lightly browned on both sides.
- Serve hot with tartare sauce and salad or steamed vegetables.
