Makes 5 cups – serves 10.
INGREDIENTS
- 1¼ cups Ensure® Vanilla powder
- 1.25kg potatoes, peeled
- 5 tbsp sour cream
- 2 tbsp butter
- ¼ cup chopped chives
INSTRUCTIONS
- Cut potatoes into chunks and place into medium saucepan and add cold water to cover.
- Bring to the boil, cover and cook until potatoes are cooked.
- Drain potatoes. Add sour cream, butter and Ensure® powder and mash until smooth.
- Stir in chives and serve.
