INGREDIENTS

  • 1 cupful flour
  • 2 tablespoonfuls melted Crisco (shortening)
  • 1 cupful ryemeal
  • 2 tablespoonfuls brown sugar
  • 2 teaspoonfuls baking powder
  • 1 egg
  • 1/2 teaspoonful salt
  • 1 cupful milk

 

INSTRUCTIONS

  1. Sifting Dry Ingredients:
    • In a mixing bowl, sift together 1 cupful of flour, 1 cupful of ryemeal, 2 teaspoonfuls of baking powder, and 1/2 teaspoonful of salt. This ensures even distribution of dry ingredients and helps in creating a uniform texture.
  2. Preparing Wet Ingredients:
    • In a separate bowl, beat 1 egg and 2 tablespoonfuls of brown sugar together until well combined.
  3. Incorporating Liquids and Fat:
    • To the egg and sugar mixture, add 1 cupful of milk and 2 tablespoonfuls of melted Crisco. Mix thoroughly to combine the wet ingredients.
  4. Combining Wet and Dry Mixtures:
    • Gently fold the wet mixture into the sifted dry ingredients. Mix until just combined, avoiding overmixing. The batter should be slightly lumpy.
  5. Filling Muffin Pans:
    • Divide the batter evenly into Criscoed (greased) gem pans or muffin tins. The greasing prevents sticking and aids in achieving a golden crust.
  6. Baking Process:
    • Preheat your oven to a moderate temperature, around 350°F (175°C).
    • Bake the muffins for approximately twelve minutes, or until they are golden brown on the top and a toothpick inserted into the center comes out clean.
  7. Finishing Touch:
    • Once baked, the Rye Muffins should have a warm and inviting aroma, with a combination of nutty rye flavor and a touch of sweetness from the brown sugar.
  8. Yield:
