INGREDIENTS:
- 12 cups cauliflower florets
- 1 chopped large onion
- 1 tsp. coriander seeds
- 1 tsp. cumin seeds
- 3/4 cup olive oil or avocado oil
- 1/2 cup lemon juice
- 3 1/2 teaspoons curry paste
- 1 tbsp. hot paprika
- 1 3/4 teaspoons salt
- 1/4 cup chopped cilantro
INSTRUCTIONS:
- Preheat the oven to 450°F (230°C).
- Place cauliflower florets in a large roasting pan. Add the chopped onions to the cauliflower.
- Dry toast the coriander and cumin seeds in a skillet over medium heat until slightly browned, approximately 5 minutes. Crush the toasted seeds using a mortar and pestle. Transfer the crushed seeds to a bowl.
- In the same bowl with the crushed seeds, whisk in the olive oil or avocado oil, lemon juice, curry paste, hot paprika, and salt to make the dressing.
- Pour the dressing over the vegetables in the roasting pan and toss well to ensure all the cauliflower and onions are coated.
- Spread the vegetables in a single layer on the roasting pan and sprinkle with pepper.
- Roast the vegetables in the preheated oven until tender, stirring occasionally, for about 35 minutes.
- Once the vegetables are roasted to perfection, sprinkle chopped cilantro over them.
- Serve the roasted cauliflower warm and enjoy!
