Roasted Beet Salad

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 3-4

 

INGREDIENTS:

  • 4 beets, cut in half
  • Olive oil
  • Salt and pepper
  • Capers
  • Chopped pickles
  • Hot sauce
  • Chopped parsley or dill

 

INSTRUCTIONS:

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Toss the halved beets in a baking dish with olive oil, salt, and pepper.
  3. Cover the baking dish and roast the beets in the preheated oven until they are tender.
  4. Once the beets are cooked, let them cool, then rub off the skins.
  5. In a bowl, combine the roasted beets with any juices from the baking dish.
  6. Add capers, chopped pickles, and a dash of hot sauce to the beets.
  7. Sprinkle with chopped parsley or dill for added flavor.
  8. Toss everything together until well combined.
  9. Serve the beet salad as a delicious and nutritious side dish or as part of a meal. Enjoy!
