Raw Vegan Double Almond Raw Chocolate Tart

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 1½ cups raw almonds
  • ¼ cup coconut oil, melted
  • 1 tablespoon raw honey or royal jelly
  • 8 ounces dark chocolate, chopped
  • 1 cup coconut milk
  • 1/2 cup unsweetened shredded coconut
  • Almond slivers (for topping)

 

INSTRUCTIONS:

CRUST:

  1. Ground the raw almonds in a food processor until finely textured.
  2. In a mixing bowl, combine the ground almonds with melted coconut oil and raw honey (or royal jelly).
  3. Mix well until the mixture is evenly combined and sticks together.
  4. Transfer the almond mixture into a tart or pie pan.
  5. Using a spatula, press the mixture firmly into the bottom of the pan to form a crust.

FILLING:

  1. Place the chopped dark chocolate in a heatproof bowl.
  2. In a saucepan, heat the coconut milk over medium heat until it’s just about to boil.
  3. Pour the hot coconut milk over the chopped chocolate in the bowl.
  4. Let the mixture sit for a minute to soften the chocolate.
  5. Gently whisk the chocolate and coconut milk together until smooth and well combined.
  6. Pour the chocolate filling into the prepared tart shell.

TOPPING:

  1. Toast the almond slivers in a dry skillet over medium heat until they are lightly golden.
  2. Sprinkle the toasted almond slivers over the top of the chocolate filling.

CHILLING:

  1. Place the tart in the refrigerator to chill for a few hours or until the filling has set.

SERVING:

  1. Once the tart is thoroughly chilled and the filling is set, you can slice and serve.
  2. Optionally, you can garnish each slice with additional shredded coconut if desired.

Enjoy your delicious dark chocolate and almond tart with its rich and creamy filling complemented by the nutty almond crust and topping.

CRUST:

The crust of the chocolate tart is made primarily from ground nuts (such as almonds or a mix of almonds and      walnuts) that are combined with coconut oil and a natural sweetener like raw honey or royal jelly. This mixture is pressed into a tart or pie pan to create a firm and flavorful base for the tart. Depending on the variations, you can use nut-free options like gluten-free graham crackers or oat cookies for the crust.

CHOCOLATE FILLING:

The chocolate filling is the heart of the tart. It’s a luscious mixture of high-quality dark chocolate (or a chocolate alternative), coconut milk, and a sweetener. The coconut milk adds creaminess and depth of flavor to the chocolate. In some variations, you might find additions like espresso powder for a hint of coffee flavor or ground vanilla bean for aromatic richness. The filling is prepared by melting the chocolate, heating the coconut milk, and then combining the two along with any other desired flavorings.

TOPPINGS:

Toppings are a delightful way to add texture and visual appeal to the tart. In the original recipe, toasted almond slivers or shredded coconut are sprinkled over the top of the tart before serving. However, variations can include a range of toppings such as fresh berries (like strawberries, raspberries, or blueberries), crushed nuts (like walnuts or pistachios), or even a dusting of cocoa powder for an extra chocolatey touch.

SERVING:

Once the tart is assembled, it needs to be chilled to set the filling and allow the flavors to meld. After the tart is chilled, it can be sliced and served as a decadent dessert. It’s a perfect treat for special occasions, gatherings, or simply when you’re craving a delightful chocolate indulgence. The balance of creamy chocolate filling, nutty crust, and optional toppings creates a dessert that’s not only satisfying in taste but also visually appealing.
