Raw Vegan Chocolate Cashew Truffles

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1 cup ground cashews
  • 1 tsp of ground vanilla bean
  • 1/2 cup coconut oil
  • 1/4 cup raw honey
  • 2 tbsp flax seeds meal
  • 2 tbsp hemp hearts
  • 2 tbsp cacao powder

 

INSTRUCTIONS:

  1. In a mixing bowl, combine the ground cashews and ground vanilla bean.
  2. Melt the coconut oil if it’s solid and add it to the bowl.
  3. Pour in the raw honey to sweeten the mixture.
  4. Incorporate the flax seeds meal and hemp hearts, adding nutritional value and texture to the truffles.
  5. Add the cacao powder to bring a rich chocolate flavor to the mixture.
  6. Thoroughly mix all the ingredients until well combined. The mixture should be thick and cohesive.
  7. Take small portions of the mixture and roll them between your palms to form truffle-sized balls.
  8. Optionally, roll the truffles in coconut flakes to add a finishing touch and a hint of tropical flavor.
  9. Place the truffles on a plate or tray, ensuring they are not touching each other.
  10. Once all the truffles are formed, refrigerate them for about 30 minutes to allow them to firm up.
  11. Once chilled and firm, the truffles are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator.

These cashew-based truffles offer a delightful combination of nuttiness, sweetness from raw honey, and the rich flavor of cacao.
