- Add the ground vanilla bean, pitted dates, and unsweetened cocoa powder to the blender. Mix well until the ingredients are fully combined. If the mixture seems dry, you can add a few drops of water at a time to help it stick together.
- Transfer the mixture to a pan or baking dish lined with parchment paper. Press it down evenly to form a compact layer.
- Warm the almond butter slightly, so it’s easier to work with. Drizzle or spread the almond butter over the top of the mixture in the pan.
- Place the pan in the refrigerator to chill and firm up. This will take at least a couple of hours, but it’s even better if you can leave it overnight.
- Once the mixture is firm, remove it from the pan and cut it into desired shapes, such as squares or bars.
- Store the walnut and date bars in an airtight container in the refrigerator. Enjoy these nutritious and delicious treats as a snack or dessert!
