I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1 1/2 cups walnuts
  • 1 cup pitted dates
  • 1 1/2 tsp. ground vanilla bean
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup almond butter

 

INSTRUCTIONS:

  1. In a food processor or blender, combine the walnuts and a pinch of salt. Blend until the walnuts are finely ground.
  2. Add the ground vanilla bean, pitted dates, and unsweetened cocoa powder to the blender. Mix well until the ingredients are fully combined. If the mixture seems dry, you can add a few drops of water at a time to help it stick together.
  3. Transfer the mixture to a pan or baking dish lined with parchment paper. Press it down evenly to form a compact layer.
  4. Warm the almond butter slightly, so it’s easier to work with. Drizzle or spread the almond butter over the top of the mixture in the pan.
  5. Place the pan in the refrigerator to chill and firm up. This will take at least a couple of hours, but it’s even better if you can leave it overnight.
  6. Once the mixture is firm, remove it from the pan and cut it into desired shapes, such as squares or bars.
  7. Store the walnut and date bars in an airtight container in the refrigerator. Enjoy these nutritious and delicious treats as a snack or dessert!

  • Add ground cinnamon, nutmeg, or cardamom to the mixture for warm spice flavor.
  • Top with a drizzle of honey or maple syrup instead of nut butter.

  • Mix in dried pineapple, mango, or papaya to the date mixture.
  • Use coconut butter or macadamia nut butter for the topping.

8. Cherry Almond Bars:

  • Add dried cherries to the date mixture for a burst of fruity flavor.
  • Use almond butter for both the mixture and the topping.
  • Top with sliced almonds for added crunch.

  • Mix in a teaspoon of instant coffee or espresso powder for a coffee-flavored twist.
