Pudding Cupcakes

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Pudding Cupcakes are a delightful and unique twist on traditional cupcakes, combining the goodness of chocolate cupcakes with a luscious chocolate pudding filling and a creamy whipped topping. These cupcakes are a delightful treat that offers a combination of textures and flavors, making them a favorite among dessert enthusiasts.

The exact origin of pudding cupcakes is not well-documented, but the concept draws inspiration from classic desserts that combine cake and pudding. Pudding itself has a long history and is believed to have originated in medieval Europe. Early pudding recipes were savory and often contained meat, grains, and spices. Over time, sweet puddings emerged, typically made with milk, sugar, and flavors such as chocolate or vanilla.

In modern times, instant pudding mixes have made it easier for home bakers to incorporate pudding flavors into their desserts. Pudding cupcakes take advantage of these convenient mixes to create a delightful and decadent treat that surprises and delights with every bite.

INGREDIENTS

  • 1 3.4-ounce box instant chocolate pudding mix
  • 1 3/4 cup whole milk
  • 12-ounce container whipped topping, thawed, divided use
  • 24 chocolate cupcakes, baked and cooled
  • 15 chocolate sandwich cookies, crushed into crumbs
  • 24 Campfire Ghoster Roasters (marshmallows)

INSTRUCTIONS

  1. In a large bowl, beat the instant chocolate pudding mix and milk on medium speed until thoroughly combined and thickened. This creates a smooth and creamy chocolate pudding mixture. Fold 1 cup of whipped topping into the pudding until no streaks remain. The addition of whipped topping adds a light and airy texture to the pudding. Cover the bowl and refrigerate the pudding for one hour to chill and set.
  2. Using a sharp paring knife or an apple corer, core the center of each chocolate cupcake. This creates a cavity in the cupcake to hold the delicious pudding filling.
  3. Reserve the pieces of cake that were removed during coring, as they will be used to cover the pudding later on, creating a seamless appearance.
  4. Fill a piping bag or a large zip-top bag with the chilled chocolate pudding. The piping bag makes it easier to fill the cupcakes neatly with the pudding.
  5. Pipe the pudding into the center of each cupcake, filling the cavity created during coring. The pudding adds a rich and creamy surprise to each cupcake.
  6. Cover the pudding filling with the reserved cake pieces that were cored from the cupcakes. This conceals the pudding inside and gives the cupcakes a polished look.
  7. Fill a large piping bag or a large zip-top bag with the remaining whipped topping. The whipped topping adds a smooth and fluffy layer on top of the cupcakes, enhancing their overall taste and texture.
  8. Pipe the whipped topping onto each cupcake, creating a beautiful and creamy swirl on top. The whipped topping complements the chocolate flavors and adds a delightful contrast.
  9. Sprinkle each cupcake with crushed chocolate sandwich cookies. The cookie crumbs add a crunchy and chocolatey element to the cupcakes, enhancing their overall texture and taste.
  10. Top each cupcake with a Campfire Ghoster Roaster marshmallow. The marshmallow adds a fun and spooky touch to the cupcakes, making them perfect for Halloween or any ghostly-themed event.
  11. Refrigerate the cupcakes until ready to serve. The chilling time allows the flavors to meld together, and the cupcakes can be served cold for a refreshing treat.
