INGREDIENTS

  • 1 tablespoonful Crisco (shortening)
  • 3 baked potatoes
  • Salt, pepper, and red pepper to taste
  • 1 yolk of egg
  • 1 tablespoonful cream
  • Chopped parsley
  • Watercress

 

INSTRUCTIONS

  1. Begin by splitting the baked potatoes in halves lengthways. This creates a base for the stuffing.
  2. Gently scoop out the centers of the potatoes, ensuring to leave a sturdy shell.
  3. Pass the scooped-out potato centers through a sieve, creating a smooth and fine texture.
  4. Season the potato pulp with the desired amount of salt, pepper, and red pepper. These seasonings add depth and flavor to the mixture.
  5. Incorporate the melted Crisco, yolk of egg, and cream into the seasoned potato pulp.
  6. Thoroughly beat the mixture until it becomes light and well combined. This step helps to create a smooth and airy texture.
  7. Transfer the potato mixture into a forcing bag fitted with a tube. A forcing bag allows for precise filling of the potato cases.
  8. Gently force the potato mixture into the hollowed-out potato cases, filling them with the flavorful mixture. Make sure the cases are dried before filling.
  9. Place the filled potato cases in a moderate oven to heat and set the mixture.
  10. Once heated, remove the potato cases from the oven and sprinkle a generous amount of chopped parsley on top.
  11. To serve, arrange the Potatoes Sefton on a plate and decorate with sprigs of watercress for added visual appeal.
