I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Potato Sausage offers a unique twist on traditional sausages, transforming mashed potatoes into a savory and satisfying delicacy. This recipe showcases the ingenuity of using staple ingredients in innovative ways to create a dish that is both comforting and versatile. The history of Potato Sausage reflects the creativity of home cooks in crafting hearty and flavorful recipes.

Sausages have been a part of culinary traditions for centuries, with various cultures developing their own versions of these flavorful meat treats. Potato Sausage emerges as a vegetarian alternative that reinvents the concept of a sausage by using mashed potatoes as the base. This inventive approach demonstrates how culinary creativity knows no bounds.

The origins of Potato Sausage likely stem from a desire to create hearty and flavorful dishes using ingredients readily available in the kitchen. Mashed potatoes, a staple in many households, provide the perfect canvas for experimentation. This dish might have originated as a way to make the most of leftovers or to create a satisfying meal that mimics the texture and satisfaction of traditional sausages.

INGREDIENTS

  • 1/2 cupful Crisco (shortening)
  • 1/4 lb. chopped onions
  • 1/2 lb. cold boiled mashed potatoes
  • 1/2 lb. breadcrumbs
  • Salt and pepper to taste
  • 2 beaten eggs

INSTRUCTIONS

  1. Begin by melting the Crisco in a pan and adding the chopped onions. Sauté the onions until they’re soft and translucent.
  2. In a mixing bowl, combine the sautéed onions with the cold boiled mashed potatoes.
  3. Add the breadcrumbs to the mixture and season it with the desired amount of salt and pepper.
  4. Incorporate the beaten eggs into the mixture, using a wooden spoon to thoroughly combine all the ingredients.
  5. With the mixture well blended, form it into sausages, shaping them with your hands.
  6. Take a cloth and tie each sausage securely within the cloth, creating a cylindrical shape similar to a roly-poly.
  7. Boil the tied sausages in water, treating them exactly as you would a roly-poly pudding. The boiling process ensures that the sausages are cooked and firm.
  8. If you don’t plan to eat the sausages immediately after boiling, you can untie them and keep them aside until they are ready to be enjoyed.
