Thanks to companies like POM Wonderful, pomegranate juice has become an easily accessible fruit juice in supermarkets, and even in several gas station franchises and convenience stores.
Biblical Proportions
The pomegranate derives its name from Old French and means “seeded apple.” Many scholars also believe that it was in fact the pomegranate, and not the apple, that was the forbidden fruit consumed by Adam and Eve in Genesis.
YIELD: 1 QUART
INGREDIENTS
- 4 cups pomegranate juice
- ¾ cup sugar
- 1 tablespoon lemon juice
PREPARATION
- Combine the pomegranate juice and sugar over medium-low heat in a saucepan, and heat until sugar is completely dissolved.
- Remove from heat and stir in the lemon juice.
- Refrigerate until chilled.
- Pour into a covered container and place in the freezer for 1 hour.
- Remove from freezer, and stir the frozen crystals into the center of the container with a fork.
- Return the container to the freezer, and repeat the process every 30–45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
