Blueberry Granita

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Blueberries are packed not only with loads of flavor, but with a multitude of beneficial vitamins, making them one of the famed “superfruits.” This granita is another way to get more of that goodness into your diet.

YIELD: 1 QUART

INGREDIENTS

  • 8 cups fresh blueberries
  • 2 teaspoons fresh lemon juice
  • ½ cup sugar
  • 1 cup water

PREPARATION

  1. Purée the berries in a food processor or blender with the lemon juice. Press purée through a strainer to remove any solid bits.
  2. Stir in the sugar and water, and allow to sit for 1 hour, stirring occasionally, until the sugar is completely dissolved.
  3. Refrigerate until chilled.
  4. Pour into a covered container and place in the freezer for 1 hour.
  5. Remove from freezer, and stir the frozen crystals into the center of the container with a fork.
  6. Return the container to the freezer, and repeat the process every 30–45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
