I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick’s Day, too. With the marshmallows, pecans and whipped cream, the sweet salad can even be served as a light dessert. I like to cook for both small groups and large crowds. And when our entire family gets together for thanks and feasting, it’s a wonderful time!

INGREDIENTS

  • 1 package (3 ounces) lime gelatin
  • 2 cups boiling water, divided
  • 16 large marshmallows
  • 1 package (3 ounces) cream cheese, softened
  • 1 can (8 ounces) unsweetened crushed pineapple, undrained
  • 1 cup heavy whipping cream, whipped
  • 1 cup chopped pecans
  • 2 to 3 drops green food coloring (optional)

 

INSTRUCTIONS

  1. In a large bowl, dissolve the lime gelatin in 1 cup of boiling water. Set it aside.
  2. In a small saucepan, combine the marshmallows and the remaining water. Cook over low heat until the marshmallows are melted, stirring occasionally.
  3. Stir the melted marshmallows into the gelatin mixture. Refrigerate the mixture until it is partially set.
  4. In a large bowl, beat the softened cream cheese until smooth.
  5. Beat in the crushed pineapple until well combined with the cream cheese.
  6. Fold in the partially set gelatin mixture, whipped cream, chopped pecans, and green food coloring (if desired). The green food coloring can enhance the visual appeal of the dessert.
  7. Pour the mixture into a 6-cup mold that has been coated with cooking spray.
  8. Refrigerate the mold until the gelatin is fully set.
  9. Once set, carefully unmold the pineapple lime gelatin onto a serving plate.
