Peanut Butter Banana Bread

  • 1 cup plus 1 tablespoon all-purpose flour
  • 1¼ teaspoons baking powder
  • 1 large egg
  • 2 medium ripe bananas, peeled and mashed
  • ¾ cup walnuts, roughly chopped
  • ¼ teaspoon salt
  • 1/3 cup granulated sugar
  • ¼ cup canola oil
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract



  1. PREHEAT THE AIR FRYER: Preheat the Air fryer to 330°F (165°C) and grease a non-stick baking dish.
  2. MIX DRY INGREDIENTS: In a bowl, combine the flour, baking powder, and salt.
  3. PREPARE WET INGREDIENTS: In a separate bowl, whisk together the egg, granulated sugar, canola oil, creamy peanut butter, sour cream, and vanilla extract until well combined.
  4. ADD BANANAS: Stir in the mashed bananas into the wet mixture and beat until well combined.
  5. INCORPORATE FLOUR MIXTURE: Gradually add the flour mixture to the wet mixture and gently fold in the walnuts until just combined.
  6. TRANSFER TO BAKING DISH: Transfer the bread mixture evenly into the prepared non-stick baking dish.
  7. COOK IN AIR FRYER: Place the baking dish into the Air fryer basket and cook for about 40 minutes.
