I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Servings: 6

INGREDIENTS:

  • 12 oz Swiss Chard
  • 1 cup Lentils, rinsed and drained
  • 1 medium Onion, finely chopped
  • 2 Cloves Garlic, minced or pressed
  • 1 tsp Cumin Seeds, coarsely crushed
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1/8 tsp Coarse Ground Black Pepper
  • 2 cups Water
  • 12 oz Dry Linguine
  • Salt
  • 6 oz Neufchatel Cheese, room temperature
  • Grated Parmesan Cheese, optional

INSTRUCTIONS:

  1. Rinse and drain the Swiss chard well. Trim off the coarse stem ends; then cut stems crosswise into 1/4-inch-wide strips and set aside. Cover chard leaves and refrigerate.
  2. In a 3-quart or larger electric cooker, combine chard stems, lentils, onion, garlic, cumin seeds, red pepper flakes, and black pepper. Pour in water.
  3. Cover and cook at low setting until lentils are tender when mashed with a fork (6 to 7 hours).
  4. Cut chard leaves crosswise into 1/2-inch-wide strips; stir into the cooker. Increase the heat setting to high; cover and cook until chard is wilted and bright green (about 15 minutes more).
  5. Meanwhile, in a 5- to 6-quart pan, cook linguine in 3 quarts of boiling water just until tender to bite (10 to 12 minutes); or cook according to package directions. Drain well; pour into a warm wide 4-quart bowl.
  6. Season lentil sauce to taste with salt. Add lentil sauce and Neufchatel cheese to the linguine; mix lightly to coat well.
  7. Offer Parmesan cheese to add taste, if desired.
  8. Serve the Swiss Chard and Lentil Linguine immediately. Enjoy!

Here are some variations of the Italian Sausage Pasta recipe:

1. ADD PROTEIN: You can enhance this recipe by adding different proteins. Instead of lentils, try using cooked ground beef, turkey, or chicken for a meaty version. For a vegetarian twist, replace lentils with chickpeas or tofu.

2. VEGGIE VARIETY: Experiment with different greens and vegetables. Substitute Swiss chard with spinach, kale, or collard greens. Add bell peppers, zucchini, or mushrooms for extra texture and flavor.

3. SPICE IT UP: Adjust the spice level to suit your taste. Increase or decrease the amount of crushed red pepper flakes for a milder or spicier kick.

4. CREAMY ALTERNATIVES: Instead of Neufchatel cheese, use cream cheese, goat cheese, or mascarpone for a creamy finish.

5. HERBS AND SEASONINGS: Try incorporating various fresh herbs like basil, cilantro, or parsley to enhance the dish’s aroma and taste. Add dried Italian seasoning or oregano for a different herbal twist.

6. NUTTY ADDITIONS: Swap pine nuts or almonds for the pine nuts to add a nutty flavor and a crunchy texture to the dish.

7. PASTA VARIATIONS: Substitute linguine with other pasta shapes like penne, farfalle, or fettuccine. You can also use gluten-free or whole wheat pasta for a healthier option.

8. CHEESE CHOICES: Experiment with different cheese varieties, such as Pecorino Romano, Gouda, or Gruyère, for a unique flavor profile.

9. SAUCES: For a different twist, consider using different pasta sauces like pesto, Alfredo, or tomato-based sauces to complement the lentils and veggies.

10. GARNISH OPTIONS: Get creative with garnishes. Top the dish with roasted cherry tomatoes, fresh basil leaves, toasted breadcrumbs, or even a drizzle of balsamic glaze for an elegant touch.
