INGREDIENTS:

  • 1/2 lb Dry pasta
  • 2 Eggs, beaten
  • 1/2 cup Olive oil
  • 4 Cloves of garlic
  • 2 Tbs Parmesan cheese
  • Salt and pepper, to taste

 

INSTRUCTIONS:

  1. Cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
  2. In a small frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté for just a moment, until the garlic becomes fragrant. Be careful not to let it burn.
  3. In a large mixing bowl, combine the cooked pasta with the beaten eggs and toss well to coat the pasta evenly.
  4. Pour the garlic-infused olive oil over the pasta and eggs mixture, and toss again to ensure the pasta is coated with the oil.
  5. Add grated Parmesan cheese to the pasta and season with salt and pepper to taste. Toss all the ingredients together until the pasta is well coated and the flavors are evenly distributed.
  6. Serve the pasta immediately while it’s still warm and enjoy this simple and delicious garlic pasta! You can also add additional toppings like chopped fresh parsley or red pepper flakes for extra flavor and color.

  1. Creamy Garlic Pasta: Add a splash of heavy cream or half-and-half to the beaten eggs before tossing with the pasta. This will create a creamy and rich sauce along with the garlic-infused olive oil.
  2. Garlic Shrimp Pasta: Sauté some shrimp in the garlic-infused olive oil before tossing with the pasta. You can also add some lemon zest and a squeeze of lemon juice for a bright and tangy flavor.

  8. Garlic and Pesto Pasta: Mix in a few spoonfuls of your favorite store-bought or homemade pesto sauce with the garlic-infused pasta. The combination of garlic and basil flavors is delightful.
  9. Garlic and Cheese Pasta: Besides Parmesan, try adding other types of cheese like grated Pecorino Romano, feta, or goat cheese for a different twist of flavors.
