Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tbsp grated orange zest
  • 2 tsp vanilla extract
  • 1/4 tsp orange extract (optional)
  • 1 cup white chocolate chips
  • 1 cup crushed shortbread cookies

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Add the egg, orange zest, vanilla extract, and orange extract (if using) to the butter mixture, and beat until well combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Stir in the white chocolate chips and crushed shortbread cookies.
  7. Scoop the cookie dough onto the prepared baking sheet, using a cookie scoop or spoon, and bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
