INGREDIENTS

FOR THE CAKE:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup fruit jam (such as apple, peach, or blackberry)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped nuts (optional)

 

FOR THE CREAM CHEESE FROSTING:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

FOR THE CAKE:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.
  6. Stir in the fruit jam, ground cinnamon, ground nutmeg, and ground cloves until well incorporated.
  7. If desired, fold in the chopped nuts into the cake batter.
  8. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  9. Bake for approximately 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

 

FOR THE CREAM CHEESE FROSTING:

  1. In a large mixing bowl, beat the softened cream cheese and butter until creamy and smooth.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  3. Stir in the vanilla extract until fully incorporated.

 

ASSEMBLY:

  1. Once the cake has completely cooled, place it on a serving plate.
  2. Frost the top and sides of the cake with the cream cheese frosting, using a spatula or icing knife to create a smooth finish.
  3. Optionally, garnish the cake with additional chopped nuts or a dusting of ground cinnamon.
  4. Allow the frosting to set before serving. This cake is best enjoyed at room temperature.
