I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

My husband was absolutely blown away by this. It’s unbelievably filling, by the way.

Yield: 1 serving, with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 22 grams of protein.

 

INGREDIENTS 

  • 1 tablespoon butter
  • 2 eggs, beaten
  • 2 ounces cream cheese, thinly sliced
  • 1/4 cup flaked smoked salmon
  • 2 scallions, sliced

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method, placing the cream cheese over half of your omelet when you get to step 6.
  2. Top with the salmon, cover, turn the burner to low, and cook until hot all the way through (2 to 3 minutes).
  3. Scatter the scallions over salmon, and follow the directions to finish making the omelet.
