I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This is a good quick supper. Serve it with a green salad and some garlic bread for the kids.

Yield: 1 serving, with 8 grams of carbohydrates and 1 gram of fiber, for a total of 7 grams of usable carbs and 17 grams of protein.

 

INGREDIENTS

  • 2 tablespoons olive oil
  • 1/4 cup diced green pepper
  • 1/4 cup chopped onion
  • 1 clove garlic, crushed
  • 3 eggs
  • 1 tablespoon grated Parmesan cheese

 

INSTRUCTIONS 

  1. Heat the olive oil in a heavy skillet over medium heat, and saute the pepper, onion, and garlic for 5 to 7 minutes, or until the onion is translucent.
  2. Beat the eggs with the Parmesan and pour into the skillet.
  3. Scramble until the eggs are set.
  4. Serve.
