The word “marmalade” itself is derived from the Portuguese word “marmelada,” which refers to quince paste, another popular preserve.

Traditionally, marmalade was made using bitter Seville oranges, which are known for their high pectin content. Over time, the recipe evolved, and various citrus fruits were incorporated to create different flavor profiles. Mixed Citrus Marmalade emerged as a creative way to combine the unique characteristics of different citrus fruits, resulting in a harmonious and zesty spread.

INGREDIENTS

  • 3 oranges
  • 2 lemons
  • 1 grapefruit
  • 6 cups water
  • 6 cups granulated sugar

 

INSTRUCTIONS

  1. Begin by thoroughly washing the oranges, lemons, and grapefruit to remove any dirt or residue.
  2. Using a sharp knife or vegetable peeler, carefully remove the colored zest from the citrus fruits, avoiding the bitter white pith. Cut the zest into thin strips or chop it finely, according to your preference.
  3. Slice the oranges, lemons, and grapefruit in half and juice them, collecting the juice in a separate bowl.
  4. Reserve any pulp, pith, and seeds from the juiced citrus fruits, as they contain natural pectin that will help the marmalade set.
  5. In a large, non-reactive pot, combine the citrus zest, juice, reserved pulp, pith, and seeds, along with 6 cups of water. Bring the mixture to a boil over medium-high heat.
  6. Reduce the heat to low and let the mixture simmer gently for approximately 1 to 1 1/2 hours, or until the citrus peel becomes tender and translucent.
  7. Remove the pot from heat and carefully strain the mixture through a fine-mesh sieve, discarding the solids.
  8. Measure the strained liquid and return it to the pot. For every cup of liquid, add 1 cup of granulated sugar.
  9. Place the pot back on the stove over medium heat, stirring continuously until the sugar has completely dissolved.
  10. Bring the mixture to a rapid boil, stirring frequently to prevent sticking or burning.
  11. Cook the marmalade at a rolling boil for approximately 15-20 minutes, or until it reaches the desired consistency. To test the consistency, place a small spoonful of the marmalade on a chilled plate and allow it to cool. It should set and wrinkle slightly when pushed with a finger.
  12. Once the marmalade has reached the desired consistency, remove the pot from heat and let it cool for a few minutes.
  13. Pour the hot marmalade into sterilized jars, leaving a small headspace at the top. Wipe the rims of the jars clean and seal them tightly with sterilized lids.
  14. Allow the jars to cool completely at room temperature. As the marmalade cools, it will set further.
  15. Once completely cooled, store the Mixed Citrus Marmalade in a cool, dark place. It can be refrigerated for extended shelf life.
