INGREDIENTS 

FOR THE GRAHAM CRACKER CRUST:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

 

FOR THE CHEESECAKE FILLING:

  • 16 ounces (2 packages) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

 

FOR THE TOPPING:

  • Fresh berries, fruit compote, chocolate shavings, or caramel sauce (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 325°F (160°C). Line a standard muffin tin with paper liners.
  2. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.
  3. Divide the crumb mixture evenly among the paper liners, pressing it down to form the crust.
  4. In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition.
  6. Mix in the vanilla extract and sour cream until the filling is smooth and well combined.
  7. Pour the cheesecake filling over the graham cracker crust in each muffin cup, filling each cup about three-quarters full.
  8. Bake the Mini Cheesecakes in the preheated oven for about 20-25 minutes, or until the edges are set and the centers are slightly jiggly.
  9. Remove the cheesecakes from the oven and let them cool in the muffin tin for about 10 minutes.
  10. Carefully transfer the Mini Cheesecakes to a wire rack to cool completely.
  11. Once the cheesecakes are fully cooled, refrigerate them for at least 2 hours, or until they are well chilled and set.
  12. Before serving, garnish the Mini Cheesecakes with fresh berries, fruit compote, chocolate shavings, or a drizzle of caramel sauce, enhancing their visual appeal and flavor.
