Migas is a popular Tex-Mex breakfast dish that combines eggs, tortilla chips, vegetables, and cheese to create a flavorful and satisfying meal. This simple yet delicious dish has a rich history and is enjoyed by many as a hearty breakfast or brunch option. Migas is known for its combination of textures and flavors, making it a favorite among breakfast enthusiasts.

Migas has its roots in Mexican cuisine and has been adapted and embraced by the Tex-Mex culinary tradition. The word “migas” translates to “crumbs” in Spanish, which refers to the use of crushed tortilla chips in the dish. The origins of migas can be traced back to Spain, where it was originally made with day-old bread crumbs sautéed with garlic and other ingredients.

When migas made its way to the United States, particularly to the southwestern states with a strong Mexican influence, it underwent some modifications to suit local tastes. In Texas, migas became associated with a breakfast dish consisting of scrambled eggs mixed with tortilla chips and various additions like vegetables, cheese, and salsa.

INGREDIENTS

  • ¼ cup chopped onion
  • ¼ cup chopped green pepper
  • 1 tablespoon bacon drippings or canola oil
  • 4 eggs
  • 1 tablespoon water
  • 1 tablespoon salsa
  • ½ cup crushed tortilla chips
  • ½ cup shredded cheddar cheese, divided
  • Chopped green onions, additional salsa, and warm flour tortillas (optional)

 

INSTRUCTIONS

  1. In a large skillet, sauté the chopped onion and green pepper in bacon drippings or canola oil until tender.
  2. In a small bowl, whisk together the eggs, water, and salsa.
  3. Add the egg mixture to the skillet with the sautéed vegetables. Cook and stir until the eggs are set.
  4. Stir in the crushed tortilla chips and ¼ cup of shredded cheddar cheese.
  5. Sprinkle the remaining shredded cheddar cheese on top of the migas.
  6. Optionally, garnish with chopped green onions and additional salsa.
  7. Serve the migas with warm flour tortillas on the side, if desired.
