The origins of nachos can be traced back to the city of Piedras Negras in northern Mexico, where it is believed that Ignacio “Nacho” Anaya invented the dish in the 1940s. As the story goes, a group of American military wives visited a restaurant after it had closed for the day. To satisfy their hunger, Ignacio improvised by layering tortilla chips with cheese and jalapeno peppers, creating the first batch of nachos.

INGREDIENTS

  • 2 ounces uncooked chorizo or bulk spicy pork sausage

  • ½ cup shredded Colby-Monterey Jack cheese
  • ½ cup shredded lettuce
  • 1 small tomato, seeded and diced
  • 3 tablespoons chopped onion
  • ¼ cup sour cream
  • ¼ cup guacamole
  • 2 tablespoons sliced jalapeno pepper

 

INSTRUCTIONS

  1. Crumble chorizo into a small skillet; add minced garlic. Cook over medium heat for 6-8 minutes or until fully cooked. Drain any excess grease.
  2. In a microwave-safe dish, combine the cooked chorizo mixture with the refried beans. Cover the dish and microwave on high for 1-2 minutes or until heated through. Stir the mixture to ensure even distribution.
  3. Place tortilla chips on a microwave-safe serving plate, forming a single layer. Sprinkle the shredded Colby-Monterey Jack cheese evenly over the chips.
  4. Heat the plate, uncovered, in the microwave on high for 1 minute or until the cheese is melted and bubbly.
  5. Spoon the chorizo and bean mixture over the chips and melted cheese, distributing it evenly.
  6. Top the nachos with shredded lettuce, diced tomato, chopped onion, sour cream, guacamole, and sliced jalapeno peppers.
