Armadillo Eggs are a delicious and savory appetizer known for their unique combination of flavors and textures. These delectable treats consist of pickled jalapeno peppers stuffed with a mixture of cheddar cheese and seasoned sausage, coated in a crispy crust. Despite their name, Armadillo Eggs do not actually contain any armadillo meat but are named after their resemblance to the shape of an armadillo egg.

Originating from the southwestern region of the United States, Armadillo Eggs are a popular dish in Tex-Mex cuisine and are often served as appetizers at parties, barbecues, and game day gatherings. The combination of spicy jalapenos, gooey cheese, and savory sausage creates a mouthwatering flavor profile that is loved by many.

These tasty morsels are believed to have been created as a variation of another popular appetizer called “jalapeno poppers,” which typically consist of jalapeno peppers stuffed with cream cheese and wrapped in bacon. The addition of seasoned sausage and a crunchy coating gives Armadillo Eggs their distinctive twist.

Whether you enjoy them as a crowd-pleasing appetizer or as a flavorful snack, Armadillo Eggs are sure to satisfy your cravings for a spicy, cheesy, and satisfying treat.

INGREDIENTS

  • 3 cans (12 ounces each) pickled jalapeno peppers
  • 4 cups (16 ounces) shredded cheddar cheese, divided
  • 1 pound bulk pork sausage
  • 1½ cups biscuit/baking mix
  • 3 eggs, lightly beaten
  • 2 envelopes pork-flavored seasoned coating mix

 

INSTRUCTIONS

  1. Cut each jalapeno in half lengthwise, and carefully remove the seeds and stems.
  2. Stuff each jalapeno pepper half with approximately 1 tablespoon of shredded cheddar cheese.
  3. In a bowl, combine the uncooked pork sausage, biscuit/baking mix, and the remaining shredded cheddar cheese. Mix the ingredients well until they are evenly combined.
  4. Take about 2 tablespoons of the sausage mixture and shape it around each stuffed jalapeno, ensuring that the cheese is completely covered.
  5. Dip each stuffed jalapeno into the beaten eggs, making sure it is thoroughly coated.
  6. Roll the coated jalapenos in the pork-flavored seasoned coating mix, pressing gently to ensure the coating adheres to the surface.
  7. Place the coated jalapenos on a baking sheet that has been coated with cooking spray.
  8. Bake the Armadillo Eggs in a preheated oven at 350°F (175°C) for 35-40 minutes or until they turn golden brown.
  9. Remove the Armadillo Eggs from the oven and let them cool slightly before serving.
  10. Serve the Armadillo Eggs as an appetizer or snack, and enjoy their spicy, cheesy goodness.

 

SERVING SUGGESTIONS:

  • Game Day Platter: Arrange the freshly baked Armadillo Eggs on a platter alongside some additional dipping sauces like ranch dressing, chipotle mayo, or a zesty salsa. Serve them as a delicious and spicy appetizer during game day gatherings or sports viewing parties.
