INGREDIENTS 

  • 1 1/2 pounds ground beef (preferably lean)
  • 1 cup crushed tortilla chips
  • 1 cup grated Mexican cheese blend (cheddar, Monterey Jack, or a mix)
  • 1/2 cup finely chopped red onion
  • 1/2 cup diced bell peppers (red, green, or a mix)
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeds removed and finely diced (adjust for desired spiciness)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 large eggs, beaten
  • 1/2 cup tomato sauce or salsa
  • Additional cheese for topping (optional)
  • Sour cream, sliced jalapeños, and extra chopped cilantro for garnish (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, crushed tortilla chips, grated Mexican cheese, finely chopped red onion, diced bell peppers, minced garlic, diced jalapeño, ground cumin, chili powder, smoked paprika, salt, black pepper, and chopped fresh cilantro.
  3. Add the beaten eggs to the mixture and gently combine all the ingredients until they are evenly distributed.
  4. Transfer the meat mixture to a greased loaf pan, shaping it into a loaf shape.
  5. Pour the tomato sauce or salsa over the top of the meatloaf, spreading it to coat the surface.
  6. If desired, sprinkle additional cheese on top of the tomato sauce layer for extra cheesiness.
  7. Place the meatloaf in the preheated oven and bake for approximately 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
  8. Once the Mexican Meatloaf is cooked, remove it from the oven and let it rest for a few minutes before slicing.
  9. Garnish the slices with sour cream, sliced jalapeños, and extra chopped cilantro if you desire an extra burst of flavor and freshness.
