Serves :4

 

INGREDIENTS:

  • 1 cup cooked and minced chicken breast
  • 1 cup low-fat cheddar, shredded
  • 1 tbsp. minced onion
  • A few basil leaves
  • 1 tsp garlic, minced

 

INSTRUCTIONS:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. In a food processor, combine the cooked and minced chicken breast, minced onion, and minced garlic. Process until you get a dense crumb consistency.
  3. Press the chicken mixture onto a parchment paper-lined cookie sheet to form a crust. Bake for 12 minutes. Let it cool for five minutes.
  4. Top the crust with 1/4 cup of tomato sauce, a handful of low-fat shredded cheese, minced basil, and sliced shiitake mushrooms.
  5. Bake for an additional 6-8 minutes, or until the toppings are melted and bubbly.
  6. Let it cool for five minutes, then slice and serve.

 

Variation: Cauliflower Crust

  1. Grate half of a large cauliflower and steam it for 15 minutes.
  2. Squeeze out the excess water from the steamed cauliflower and let it cool.
  3. Mix the cooled cauliflower with 2 beaten eggs, 1 cup of low-fat mozzarella, salt, and pepper.
  4. Pat the cauliflower mixture into a 10-inch round on a prepared cookie sheet.
  5. Brush the cauliflower crust with oil and bake until it turns golden brown.
  6. Add the same toppings (tomato sauce, low-fat cheese, basil, and shiitake mushrooms) on the cauliflower crust.
  7. Bake for 6-8 minutes more, or until the toppings are melted and bubbly.
  8. Let it cool for five minutes, then slice and serve.
  9. After baking the crust, spread the marinara sauce evenly over it.
  10. Top with sliced fresh mozzarella cheese and halved cherry tomatoes.
  11. Bake for an additional 6-8 minutes, or until the cheese is melted and bubbly.
  12. Garnish with fresh basil leaves.
  13. To make the chicken crust, the cooked and minced chicken breast is combined with low-fat cheddar cheese, minced onion, garlic, salt, pepper, and basil leaves. Beaten eggs are added to bind everything together. The mixture is then pressed onto a baking sheet and baked until cooked through and golden brown.
