The history of marmalade cookies can be traced back to the origins of marmalade itself. Marmalade is believed to have originated in Portugal, where it was made using quinces. The name “marmalade” is derived from the Portuguese word “marmelo,” which means quince. The process of making marmalade later spread to Scotland, where it became popular with the addition of oranges.

The combination of marmalade and cookies is a modern adaptation that showcases the versatility of this delightful fruit preserve. The sweet and tangy flavors of marmalade complement the buttery and soft texture of the cookies, resulting in a delightful treat loved by many.

 

 

INGREDIENTS

  • 175g unsalted butter, softened
  • 200g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 400g plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Extra flour for dusting
  • Icing sugar for dusting

 

BUTTER ICING:

  • 140g butter
  • 260g icing sugar
  • 1/4 tsp vanilla extract
  • A few drops of orange gel coloring
  • 3 tbsp milk

 

INSTRUCTIONS

  1. Cream the softened butter and caster sugar until pale and soft. Add the eggs and vanilla extract, and mix until well combined.
  2. In a separate bowl, mix the plain flour, baking powder, and salt. Add this dry mixture to the egg mixture and gently combine until the dough comes together and all ingredients are fully incorporated.
  3. Wrap the dough in plastic wrap and refrigerate it for at least an hour to firm up.
  4. Preheat your oven to 180°C (356°F) and line a baking tray with baking paper. Dust the surface with flour, and place the chilled dough on top. Dust the dough with a little more flour to prevent sticking. Roll the dough out to a thickness of about 5mm.
  5. Use a cookie cutter to cut out the desired shapes from the dough. Place the cut-out shapes onto the prepared baking tray, leaving a little room in between each cookie for expansion.
  6. The baking time will vary depending on the size of your cookies. Bake the cookies for 6 minutes, then rotate the tray 180 degrees and bake for an additional 4-6 minutes until the cookies are starting to color and are golden on the bottom. Remove the cookies from the oven and place them on a cooling rack to cool.

 

BUTTER ICING:

  1. Cream the butter until soft. Sift in the icing sugar and beat until combined. Mix in the vanilla extract, and add a few drops of orange gel coloring for a vibrant hue.
  2. Add 2 tablespoons of milk to the icing and beat until the mixture is smooth and well incorporated.
  3. Spread the prepared butter icing onto the cooled cookies, and then sandwich them together to form delicious marmalade cookie pairs.
