  • 1 ½ cups whole wheat flour
  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ cup pure maple syrup
  • ½ cup unsweetened applesauce
  • ½ cup plain Greek yogurt
  • 2 large eggs
  • ¼ cup melted coconut oil (or other oil of choice)
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts
  • Additional chopped walnuts for topping (optional)

 

INSTRUCTIONS 

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
  2. In a large bowl, combine the whole wheat flour, vanilla protein powder, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Mix well to ensure even distribution of dry ingredients.
  3. In a separate bowl, whisk together the pure maple syrup, unsweetened applesauce, plain Greek yogurt, eggs, melted coconut oil, and vanilla extract. Combine until the mixture is smooth and well incorporated.
  4. Gently fold the wet ingredients into the dry ingredients using a spatula. Be cautious not to overmix; just combine until no dry spots remain.
  5. Add the chopped walnuts to the batter and fold them in. The walnuts provide texture, flavor, and a boost of healthy fats.
  6. Divide the batter evenly among the muffin cups, filling each cup about two-thirds full.
