Our family looks forward to tapping the maple trees in March and then enjoying the pure maple syrup year-round. This is just one of the recipes I like to make that has maple syrup as an ingredient.

INGREDIENTS

  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 cup 2% milk
  • 2 tablespoons canola oil
  • 1 tablespoon maple syrup
  • Additional maple syrup

 

INSTRUCTIONS

  1. In a small bowl, combine the all-purpose flour, baking powder, and salt.
  2. In another bowl, whisk together the egg, milk, canola oil, and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and stir until just blended. Avoid overmixing to ensure tender pancakes.
  4. Heat a griddle or non-stick skillet over medium heat and lightly grease it.
  5. Pour ¼ cupfuls of batter onto the hot griddle, spacing them apart. Cook until bubbles form on the top surface of the pancakes.
  6. Flip the pancakes and cook until the second side is golden brown.
  7. Transfer the cooked pancakes to a serving plate and keep warm.
