Lunch rolls, with their soft texture and inviting aroma, are a quintessential component of comforting meals. These rolls, made with a blend of simple ingredients and the magic of yeast, have a history rooted in the art of breadmaking. Their versatility and charm make them a beloved addition to various dining occasions, from casual lunches to elegant dinners.

The tradition of breadmaking dates back thousands of years, as humans discovered the alchemical process of combining water, flour, and yeast to create a fundamental staple. Over time, various cultures developed their unique bread recipes, from flatbreads to leavened loaves. Rolls, as a smaller and often more delicate bread variety, emerged as an extension of these traditions.

Lunch rolls, in particular, likely gained popularity during the 20th century as bread baking became an essential part of home cooking. Families and individuals would gather around the table for lunch, and these soft, freshly baked rolls would add warmth and comfort to the meal. The recipe’s simplicity made it accessible to home bakers of all skill levels, allowing for the creation of a delightful batch of rolls to be shared and savored.

 

 

INGREDIENTS

  • 1 yeast cake
  • 1-1/4 cupfuls milk
  • 2 tablespoonfuls sugar
  • 2 tablespoonfuls Crisco (shortening)
  • 4 cupfuls flour
  • 1 egg
  • 1 teaspoonful salt

 

INSTRUCTIONS

  1. Begin by scalding the milk. Scalding involves heating the milk until small bubbles form around the edges. Allow the scalded milk to cool until it’s lukewarm.
  2. Dissolve the yeast cake in the lukewarm milk. The yeast will activate and become frothy.
  3. Add sugar to the yeast-milk mixture, stirring until the sugar is dissolved.
  4. Incorporate the Crisco and 2 cupfuls of flour into the mixture. Beat the ingredients thoroughly to create a smooth batter-like consistency.
  5. Beat the egg well and add it to the mixture.
  6. Gradually add the remaining flour and salt to the batter. Mix well to form a dough that holds together.
  7. Turn the dough out onto a floured board and knead it lightly and thoroughly. Use as little flour as possible during kneading to maintain the dough’s desired texture.
  8. Place the kneaded dough in a greased bowl. Cover the bowl and set it aside in a warm place to rise for about two hours. The warmth encourages the yeast to ferment and the dough to double in size.
  9. Once the dough has risen and become light and airy, form it into small rounds. These will become the individual rolls.
  10. Place the rounds on a greased baking pan, leaving about one inch of space between them. This spacing allows the rolls to expand while baking.
  11. Allow the rolls to rise again for about half an hour. This second rising period contributes to the rolls’ light and fluffy texture.
  12. Preheat the oven to a hot temperature.
  13. Brush the tops of the rolls with Crisco (shortening). This step adds flavor and helps create a golden crust.
  14. Place the pan with the rolls in the preheated oven and bake for approximately fifteen minutes. The high heat will create a beautiful golden color and a delicious aroma.
  15. Once baked, remove the rolls from the oven and let them cool slightly before serving. The lunch rolls are best enjoyed warm.
