Lime granita is a perfect end to a spicy dinner, as it plays well with the heat of the meal. Sweet and satisfying, it also is an excellent base for a splash of tequila, should you so desire.
YIELD: 1 QUART
INGREDIENTS
- 1 tablespoon lime zest
- ¾ cup sugar
- 2½ cups water
- 1½ cups freshly squeezed lime juice
INSTRUCTIONS
- Combine the lime zest and sugar with your fingers in a small bowl, until the sugar is pale green and aromatic.
- In a medium saucepan, combine ½ cup of water with the zested sugar, and heat over medium heat until the sugar is completely dissolved.
- Remove from heat and stir in the lime juice and remaining water, then chill in the refrigerator.
- Pour the mixture into a covered container and place in the freezer for 1 hour.
- Remove the container from the freezer and stir the frozen crystals into the center of the container with a fork.
- Return the container to the freezer and repeat the process every 30-45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
