I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Lime granita is a perfect end to a spicy dinner, as it plays well with the heat of the meal. Sweet and satisfying, it also is an excellent base for a splash of tequila, should you so desire.

YIELD: 1 QUART

INGREDIENTS 

  • 1 tablespoon lime zest
  • ¾ cup sugar
  • 2½ cups water
  • 1½ cups freshly squeezed lime juice

INSTRUCTIONS

  1. Combine the lime zest and sugar with your fingers in a small bowl, until the sugar is pale green and aromatic.
  2. In a medium saucepan, combine ½ cup of water with the zested sugar, and heat over medium heat until the sugar is completely dissolved.
  3. Remove from heat and stir in the lime juice and remaining water, then chill in the refrigerator.
  4. Pour the mixture into a covered container and place in the freezer for 1 hour.
  5. Remove the container from the freezer and stir the frozen crystals into the center of the container with a fork.
  6. Return the container to the freezer and repeat the process every 30-45 minutes, stirring carefully each time, until you have a fully frozen container of crystallized granita.
