INGREDIENTS

FOR CRUST:

  • 1 1/2 cups graham cracker crumbs (about 10 crackers)
  • 6 tablespoons unsalted butter, melted
  • 3 tablespoons sugar

 

FOR FILLING:

  • 1 can (14 ounces) sweetened condensed milk
  • 3 large egg yolks
  • 1/2 cup fresh lemon juice
  • 1/2 cup plain or honey lemon Greek yogurt
  • 2 tablespoons grated lemon zest

 

INSTRUCTIONS

FOR CRUST:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 3 tablespoons of sugar. Mix well.
  3. Press the mixture into a 9-inch pie plate, forming an even crust along the bottom and sides.
  4. Bake the crust in the preheated oven for about 10 minutes or until lightly browned. Remove from the oven and let it cool completely on a wire rack.

 

FOR FILLING:

  1. In a large mixing bowl, beat the egg yolks until they become light yellow.
  2. Gradually beat in the sweetened condensed milk until the mixture is smooth.
  3. Add the fresh lemon juice to the mixture and beat until fully combined.
  4. Whisk in the Greek yogurt and grated lemon zest, ensuring the filling is well blended.
  5. Pour the lemon and yogurt filling into the cooled graham cracker crust.
  6. Bake the pie in the preheated oven for 15 minutes.
  7. Remove the pie from the oven and allow it to cool completely on a wire rack.
  8. Once cooled, refrigerate the pie until it is thoroughly chilled.
  9. Serve the Lemon & Yogurt Pie with a dollop of whipped cream for added indulgence.
