Shepherd’s Pie

These resourceful cooks would chop up the leftover meat, combine it with vegetables, and cover it with a layer of mashed potatoes before baking it all together. This budget-friendly meal became known as “Shepherd’s Pie” when it was associated with the shepherd’s humble way of living and tending to sheep in the countryside.

The traditional Shepherd’s Pie primarily consisted of minced or ground lamb, as it was more readily available in rural British regions where sheep farming was common. In regions with more access to beef, a similar dish known as “Cottage Pie” emerged, using minced beef instead of lamb.

Over time, the popularity of Shepherd’s Pie spread beyond the UK, becoming a beloved comfort food in various countries. Different variations and adaptations of the dish emerged, incorporating regional ingredients and flavors. The addition of spices and herbs, like garam masala and ginger in this particular recipe, adds a delightful twist to the classic Shepherd’s Pie, infusing it with rich and aromatic flavors.

INGREDIENTS

  • Red onions
  • Thumb-sized piece of fresh ginger
  • Cloves of garlic
  • Red capsicum (bell pepper)
  • Olive oil
  • 500g lamb mince
  • 1 heaped tablespoon garam masala
  • 1 cinnamon stick
  • Cardamom pods (podded)
  • 1 x 400g tin tomatoes
  • 1kg potatoes
  • Sea salt
  • Freshly ground black pepper
  • Unsalted butter
  • Semi-skimmed milk
  • 100g frozen peas

 

INSTRUCTIONS

  1. Preheat the oven to 200°C (392°F). Peel and finely chop the onions, ginger, and garlic. Deseed and finely slice the red capsicum. Heat 1 tablespoon of olive oil in a large frying pan over high heat. Add the lamb mince, garam masala, cinnamon stick, and cardamom pods. Fry for around 5 minutes, or until the mince is cooked through and lightly browned, stirring regularly.
  2. Remove the mince to a bowl and set it aside. Place the pan back on the heat, reduce to medium, and cook the onion, ginger, and garlic for around 5 minutes, or until softened. Add the capsicum and cook for a further 5 minutes. Pour in the tinned tomatoes, breaking them up with a spoon, and add half a tin’s worth of water. Stir well, bring to a boil, then reduce to low heat. Stir the mince back into the pan and simmer for 25 minutes, or until the mixture thickens, stirring occasionally.
  3. While the mince simmers, peel the potatoes, cutting any larger ones into quarters, and place them in a large saucepan. Cover with water, add a good pinch of salt, and cook for 20 minutes, or until tender.
  4. Drain the potatoes in a colander and let them steam dry. Return the potatoes to the empty pan, add a knob of butter, a splash of milk, and a pinch of salt and pepper. Mash the potatoes well.
  5. Stir the frozen peas through the mince, season with salt and pepper, and remove the cinnamon stick. Transfer the mince mixture to an ovenproof baking dish (roughly 20 x 25cm).
  6. Evenly spoon the mashed potatoes over the top, smooth the surface slightly, and use a fork to fluff it up for texture. Drizzle the pie with a little olive oil and season lightly. Bake in the oven for around 30 minutes, or until the pie is golden and bubbling.
