INGREDIENTS

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 3 large eggs, separated
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • Optional: 1/4 cup chopped green onions or jalapeños for added flavor and texture

 

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similarly sized casserole dish.
  2. In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. Stir the dry ingredients together until well combined.
  3. In a separate bowl, whisk together the buttermilk, egg yolks, and melted butter until well incorporated.
  4. Gradually pour the buttermilk mixture into the dry ingredients, stirring gently to form a smooth batter. If desired, fold in the chopped green onions or jalapeños at this stage.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter, ensuring they are fully incorporated while maintaining the batter’s lightness and airiness.
  7. Pour the batter into the greased baking dish, spreading it evenly with a spatula.
  8. Bake the spoon bread in the preheated oven for approximately 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Remove the spoon bread from the oven and let it cool for a few minutes before serving.
  10. Spoon the warm Kentucky Spoon Bread directly from the dish onto individual plates or bowls. Serve it as a side dish to accompany meats, vegetables, or soups, or enjoy it on its own as a comforting and satisfying treat.
