I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

When she gets tired of eating plain pork rinds, Lowcarbezine! reader Kathy Rice makes this dip to go with them.

Yield: 2 servings, each with 2 grams of carbohydrates and 0.5 gram of fiber, for a total of 1.5 grams of usable carbs and 3.5 grams of protein.

 

INGREDIENTS 

  • 3 ounces cream cheese, softened
  • 2 tablespoons salsa

 

INSTRUCTIONS 

  1. In a small mixing bowl, combine the cream cheese and salsa.
  2. Blend well until smooth.
  3. Serve immediately with tortilla chips or your favorite dipping snacks.
