History of Italian Pignoli Cookies: Italian Pignoli Cookies have their origins in the diverse culinary heritage of Italy. INGREDIENTS 

  • 2 cups almond flour
  • 2 cups powdered sugar
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Pinch of salt
  • 1 1/2 cups pine nuts

 

INSTRUCTIONS

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour and powdered sugar until well combined.
  3. In a separate bowl, whisk the egg whites until frothy. Add the vanilla extract, almond extract, and salt. Continue whisking until the mixture forms soft peaks.
  4. Gently fold the almond flour mixture into the egg white mixture. Stir until a smooth dough forms.
  5. Place the pine nuts in a shallow bowl or plate. Take about 2 tablespoons of dough and roll it into a ball between your palms. Roll the ball in the pine nuts, pressing lightly to adhere the nuts to the dough. Repeat this process with the remaining dough and pine nuts.
  6. Arrange the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake the cookies in the preheated oven for 12 to 15 minutes, or until the edges are golden brown and the tops are lightly cracked.
  8. Remove the baking sheet from the oven and let the cookies cool completely on the sheet. The cookies will be soft and delicate when warm but will firm up as they cool.
