INGREDIENTS

FOR THE CAKE:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs, beaten
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1 cup chopped pecans

 

FOR THE CREAM CHEESE FROSTING:

  • 16 ounces cream cheese, softened
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

 

INSTRUCTIONS

FOR THE CAKE:

  1. Preheat the oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, cinnamon, and salt.
  3. Add the beaten eggs, vegetable oil, and vanilla extract to the dry ingredients. Stir until the mixture is well combined and smooth.
  4. Fold in the mashed bananas, crushed pineapple, and chopped pecans, mixing until evenly distributed.
  5. Divide the batter equally among the prepared cake pans, spreading it out evenly.
  6. Bake the cakes in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

 

FOR THE CREAM CHEESE FROSTING:

  1. In a large mixing bowl, beat the softened cream cheese and unsalted butter together until light and fluffy.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  3. Stir in the vanilla extract and continue beating until the frosting is smooth and creamy.

 

ASSEMBLY AND FROSTING:

  1. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
  2. Place the second cake layer on top of the frosting and repeat the process, spreading another layer of frosting.
  3. Finally, place the third cake layer on top and frost the top and sides of the entire cake with the remaining cream cheese frosting.
  4. Optional: Garnish the top of the cake with additional chopped pecans or banana slices for decoration.
  5. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
