INGREDIENTS

  • 1/4 cupful sugar
  • 3 tablespoonfuls Crisco (shortening)
  • 1 teaspoonful salt
  • 3/4 teaspoonful powdered cinnamon
  • 1 teaspoonful powdered ginger
  • 1 egg
  • 1/2 yeast cake
  • Flour
  • 1/4 cupful chopped candied citron
  • 1/2 cupful seeded raisins
  • 1 cupful scalded milk
  • 1/4 cupful lukewarm water

 

INSTRUCTIONS

  1. In a mixing bowl, combine the 1/4 cupful of sugar, 3 tablespoonfuls of Crisco, and 1 teaspoonful of salt.
  2. Pour the scalded milk over this mixture and stir until the Crisco is melted and the sugar is dissolved.
  3. Dissolve 1/2 yeast cake in 1/4 cupful of lukewarm water and add it to the milk mixture.
  4. Add the 3/4 teaspoonful of powdered cinnamon and 1 teaspoonful of powdered ginger to the mixture, along with the well-beaten egg.
  5. Begin adding flour gradually while stirring to create a stiff dough. Add enough flour to achieve the desired consistency.
  6. Incorporate the 1/4 cupful of chopped candied citron and 1/2 cupful of seeded raisins into the dough. This will add sweetness and texture to the buns.
  7. Cover the dough and allow it to rise overnight. This slow fermentation will develop flavor and texture.
  8. In the morning, the dough should have risen. Divide it into pieces and shape them into neat buns.
  9. Place the buns in a pan that has been greased with Crisco, leaving about an inch of space between each bun.
  10. Allow the buns to rise again until they are visibly puffed and expanded.
  11. Brush the tops of the buns with either milk or a beaten egg to give them a shiny finish when baked.
  12. Preheat your oven to a moderately hot temperature, typically around 375°F (190°C).
  13. Bake the buns in the preheated oven for approximately 25 minutes or until they are golden brown and fully baked.
  14. Once the buns are baked and have cooled, create a cross on top of each bun using ornamental frosting or strips of paste before baking.
