The process of nixtamalization, where corn kernels are treated with an alkali solution like wood ash or lime, was practiced by Native American tribes to enhance the nutritional value of corn and make it more easily digestible. This process led to the creation of hominy – large, swollen corn kernels that are a key ingredient in this bread.

Over time, corn and hominy became integral to the Southern culinary landscape, with dishes like grits and cornbread becoming iconic staples. The emergence of hominy bread can be seen as an evolution of these traditions. INGREDIENTS

  • 3 cupfuls cooked hominy
  • 2 tablespoonfuls melted Crisco (shortening)
  • 1-1/2 cupfuls cornmeal
  • 2 eggs
  • 1 teaspoonful salt
  • 2 teaspoonfuls baking powder
  • 2 cupfuls milk

 

INSTRUCTIONS

  1. Preheat your oven to a slow temperature.
  2. In a mixing bowl, beat the eggs thoroughly until well combined.
  3. Add the milk and the cooked hominy to the beaten eggs. The hominy should be well-drained before adding.
  4. Sift in the cornmeal into the mixture. Sifting helps to avoid lumps and ensures even distribution.
  5. Add the baking powder and salt to the mixture. These ingredients will help the bread rise and develop flavor.
  6. Pour in the melted Crisco (shortening). This adds moisture and richness to the bread.
  7. Use a whisk or a spatula to thoroughly combine all the ingredients. Continue mixing for about three minutes to ensure a smooth and consistent batter.
  8. Grease a deep baking pan with Crisco or use a non-stick spray to prevent sticking.
  9. Pour the prepared batter into the greased pan, spreading it evenly.
  10. Place the pan in the preheated oven and bake for approximately one hour. The slow baking at a lower temperature ensures that the bread cooks evenly and retains moisture.
  11. To check for doneness, insert a toothpick or a knife into the center of the bread. If it comes out clean, the bread is ready.
  12. Once baked, carefully remove the pan from the oven.
  13. Allow the hominy bread to cool slightly before slicing and serving.
  14. Serve the hominy bread while it’s still hot. It can be enjoyed on its own or accompanied by butter, jam, honey, or any other toppings of your choice.
