I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Halloween Cupcakes are spooky and delightful treats that capture the spirit of the Halloween season. These cupcakes feature rich and moist chocolate cake bases topped with a fluffy and sweet buttercream frosting. The finishing touch of mini chocolate chip eyes adds a playful and eerie element, perfect for Halloween-themed celebrations, parties, or just adding a touch of festivity to your dessert table during the spooky season.

The tradition of celebrating Halloween dates back thousands of years to the ancient Celtic festival of Samhain, held on the night of October 31. Samhain marked the end of the harvest season and the beginning of winter, a time when the boundary between the living and the dead was believed to be blurred, allowing spirits to roam freely on Earth.

As Christianity spread, the festival of Samhain merged with the Christian holiday of All Hallows’ Eve (or All Saints’ Eve), which commemorates the eve of All Saints’ Day on November 1. Over time, All Hallows’ Eve evolved into Halloween, a secular celebration marked by various customs, including dressing up in costumes, carving pumpkins, and enjoying festive treats.

The tradition of baking Halloween-themed treats, including cupcakes, emerged as a way to add a touch of Halloween spirit to the culinary delights enjoyed during this time of year. Bakers and home cooks began incorporating spooky elements into their desserts, such as spiderweb designs, pumpkin-shaped cookies, and, of course, cupcakes adorned with candy eyes and other eerie decorations.

Today, Halloween Cupcakes are a popular treat during the Halloween season, loved by both kids and adults alike. They provide a fun and creative way to celebrate the holiday while satisfying everyone’s sweet tooth.

INGREDIENTS

Chocolate Cupcakes:

  • 1/2 cup boiling water
  • 1/4 cup unsalted butter, softened
  • 1 cup sugar
  • 1/3 cup good quality cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 large egg, beaten
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Buttercream Frosting:

  • 1 1/3 cups unsalted butter, softened
  • 8 oz marshmallow fluff (about 2 cups)
  • 1 tablespoon vanilla extract
  • 1 teaspoon heavy cream
  • 2 2/3 cups confectioners’ sugar
  • 24 mini chocolate chips (for eyes)

INSTRUCTIONS

Chocolate Cupcakes:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Line a 12-count muffin tin with cupcake cups.
  3. In the bowl of a stand mixer, combine the softened butter, sugar, cocoa powder, and boiling water. Beat on low until smooth and the sugar is dissolved.
  4. In a separate bowl, combine the all-purpose flour, salt, baking powder, and baking soda.
  5. In a third bowl, beat the egg and add the sour cream and vanilla extract. Whisk until smooth.
  6. With the mixer on low, add half of the dry ingredients to the butter/sugar/cocoa mixture. Then, add the egg/sour cream mixture and finish with the remaining flour. Mix just until the flour is incorporated.
  7. Pour the batter into the cupcake cups, filling them about 2/3 full.
  8. Bake the cupcakes for 20 to 25 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
  9. Allow the cupcakes to cool in the pan for 5 minutes, then remove them from the pan and let them cool completely before frosting.

Buttercream Frosting:

  1. In the bowl of a stand mixer, combine the softened butter and marshmallow fluff. Beat until creamy and smooth.
  2. Add the vanilla extract and heavy cream, and beat until incorporated.
  3. With the mixer on low, slowly add the confectioners’ sugar. Once incorporated, increase the speed and beat for 1 minute until the frosting is light and fluffy. Add a pinch of salt if the frosting is too sweet.
  4. Frost the cooled cupcakes with the buttercream frosting, using a piping bag or a knife to achieve your desired look.
  5. Decorate each cupcake with two mini chocolate chips as eyes to give them a spooky appearance.
