I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Should you happen to have leftover guacamole-an unlikely circumstance, I’ll admit-this is a fine thing to do with it.

Yield: 1 serving, with 6 grams of carbohydrates and 1 gram of fiber, for a total of 5 grams of usable carbs and 26 grams of protein (and a whopping 487 milligrams of potassium!).

 

INGREDIENTS 

  • 1 tablespoon oil
  • 2 eggs, beaten
  • 2 ounces Monterey Jack cheese, sliced or shredded
  • 1/4 cup guacamole

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method.
  2. Place the cheese over half of your omelet when you get to step 6.
  3. Spread the guacamole over the cheese, cover, turn the burner to low, and cook until the cheese is melted (3 to 4 minutes).
  4. Follow the directions to finish making the omelet.
